I love my cast iron and I do not regret making the switch for most of our pots and pans. Our largest skillet is perfect for making large batches of our favorite foods including everyday skillet meals like this and even giant pies that can feel our family and then some. This cast iron chicken skillet dinner is so simple I can toss it together and let cook in the oven while we get other things done.
This simple chicken skillet dinner combines juicy chicken breast, oven-roasted potatoes, crisp green beans, with garlic, red onions, herbs, and plenty of real butter. In case you didn’t notice with the sinful sausage and potatoes dinner I love cooking with butter.

- 1 pound chicken breast
- 4 cups chopped potatoes
- 4 cups green beans
- 1 med red onion
- 1 bulb fresh garlic
- 1/4 pound (1 stick) butter
