The Kitchen

This year is a big one for our family. Just this weekend we spent hours whittling away at the property and looking at where we plan to expand it. The baby is gaining independence and with it, I am gaining time to bring our goals to fruition. This year is our ten year anniversary and our marriage is getting better by the day. Today my loving husband turns 31. I decided to bake him cupcakes using his favorite Faygo brand sodas for him to take to work. These simple soda cupcakes are loads of fun. I had never made these and often prefer to bake from scratch but I needed dozens of cupcakes for my husband to take to work... Yes, I am THAT wife and he loves it. I took the easy route. Turns out soda cupcakes are so easy the only time-consuming part was frosting and manning the oven. Soda Pop Cupcakes I cheated and I stead of going out shopping I used a grocery delivery service to get the supplies and even some toss away aluminum pans with lids for transporting. The ingredients where so simple I questioned if this would work but I remembered seeing them premade for sale when we were growing up. All you need is a box of white cake mix and 12 ounces of your soda of choice. I also opted for a batch of chocolate with classic cola that tastes just like the cake from Cracker Barrel. 1 box cake mix 12 oz of soda While these are straightforward you just follow the directions on the box but use soda instead of eggs, oil, and water. I may have let the kids lick the spoon because well no eggs! Pull these out while still a bit gooey because they do firm up after a while. It took a bit of trial and error. For the best results leave the batter in the bowl for about half an hour before putting into the cupcake cups. All the baking powder will activate giving you fluffier cupcakes. I melted some store bought frosting and added 2 tablespoons of easy Faygo soda to them stirring well to make easy matching frosting for them. This was totally cheating because a buttercream with soda would be easy to whip up. That's ok though because when you're managing a large family sometimes shortcuts make it a little easier and a little more fun. I hope he has a wonderful birthday this year even if new tools doesn't top the concert VIP pass I got him last year.
