I love those rotisserie chickens from the grocery store. These are fairly cheap. In fact, at Sams Club I can usually get them for around $4 each already cooked and ready to go. Sometimes at places like Kroger or Walmart you can even find them for cheaper when they clearance out after they have been sitting and have to move to the refrigerated area of the deli.
In today’s economy, we don’t have any room in our budget for letting things go to waste. This means I need to make sure every scrap of food gets out to use somewhere to feed our family of 10.
Rotisserie chickens are so popular the other day when we ran to Sam’s Club for a few things we saw a whole group of women gathered around the rotisserie chicken counter waiting for a batch to get done.

Ways to use up a leftover rotisserie chicken
The first thing I do after the family has enjoyed a rotisserie chicken for dinner often with sides like creamy mashed potatoes is to remove as much of the meat as possible. The leftover meat gets used in some of our favorite chicken recipes while the bones go in the freezer until I have enough to make a batch of bone broth.

My favorite way to use up leftover rotisserie chicken is to toss it into a pot of homemade chicken soup or dumplings. Because t eh meat is already cooked it knocks off the majority of the cooking time making it easy to get a comforting and healing dishes whipped up for my family.

Sometimes I need something that is just super easy. The day after rotisserie chickens if we have enough left over will smother it in one of our favorite homemade barbecue sauces and make pulled chicken sandwiches for lunch.
