Why Red Velvet Cake Mix Cookies?

First things first, why choose Red Velvet Cake Mix Cookies? Well, besides being absolutely scrumptious, they’re perfect for those moments when you’re craving something sweet but don’t have a lot of time to spare. With just a few simple ingredients and minimal prep work, you can whip up a batch of these delightful cookies in no time.

these cookies are great for whipping up for holiday parties with the summer holidays rolling in. From Memorial Day to 4th of July this recipe is the perfect cookie for summer. When winter rolls around it is a total hit for Christmas and Valentine’s Day as well.

Ingredients You’ll Need:

Let’s Get Baking!

Start by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper or a silicone sheet liner. This will ensure that your cookies bake evenly and don’t stick to the pan.

In a large mixing bowl, combine the red velvet cake mix, vegetable oil, eggs, and vanilla extract. Stir until everything is well combined and you have a smooth cookie dough. If you’re feeling adventurous, go ahead and fold in those white chocolate chips for an extra burst of sweetness and flavor!

Using a spoon or cookie scoop, drop rounded tablespoons of dough onto your prepared baking sheet, spacing them about 2 inches apart. This will give your cookies room to spread as they bake, resulting in perfectly chewy centers and crisp edges.

Pop your baking sheet into the preheated oven and bake your cookies for 8-10 minutes, or until the edges are set and the tops are slightly firm to the touch. Be careful not to overbake them, infact you want to leave them not fully cooked when you pull them, because you want to maintain that soft, melt-in-your-mouth texture that makes these cookies so irresistible.

Once your cookies are done baking, remove them from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Or, if you simply can’t wait, go ahead and enjoy them warm with a cold glass of milk!
