One great part about our time living in Mexican Town is we have this really great Mexican Grocery store just a few blocks away filled with tasty mixes, and sauces to let us have some quick and easy meals with a little spice. We had so much fun working down by the Cinco De Mayo Parade last weekend we decided we wanted some food to celebrate ourselves. Only this pregnant mama was tired and decided the best bet was to look for an Easy Idea rather than pulling out my favorite Latin Cooking book "Not Just Tacos." To keep the meal frugal I opted to use the Instant Pot that leaves even the cheapest meats juicy and flavorful. I picked up three pounds of the cheapest chicken breast the store had on hand and sliced it nice and thin. Tossed in three leftover peppers and half an onion. Spiced it up with a bottle of Mexican Fajita Sauce & Marinade we found while scouting E & L Supermercado. Mix everything together and toss into your Instant Pot. Manually set your Instant Pot to 10 minutes. Allow it to naturally release the pressure for a perfectly cooked juicy Chicken Fajita Dinner.
