Blueberry Cheesecake

Last week we found whole 13# cases of blueberries for $2 each and stocked a couple of cases. After sorting washing and freezing them I have found myself needing to find uses for a lot of blueberries in our everyday diet to make the most of the 6 gallons we got. One way we are using them is to make blueberry cheesecake.

What you need for blueberry cheesecake

  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

How to make homemade blueberry cheesecake

Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.

In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form the crust.

In another bowl, beat cream cheese, 3/4 cup sugar, and vanilla extract until smooth. Add eggs, one at a time, beating well after each addition. Stir in sour cream until combined.

Pour the cream cheese mixture over the crust and smooth the top with a spatula.

Bake in the preheated oven for 45-50 minutes or until the edges are set and the center is slightly jiggly.

Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours or overnight.

In a saucepan, combine blueberries, 1/4 cup sugar, and lemon juice. Cook over medium heat until the blueberries burst and the mixture thickens, about 10 minutes. Let it cool.

Once the cheesecake has chilled, spoon the blueberry compote over the top.

Slice, serve, and enjoy every luscious bite!
