Pancakes are a favorite around here. Perfect for breakfast or dinner. Monkey loves to help me make pancakes for everyone which helps me so much.
Over the years we have perfected our recipe to the point we have created the fluffiest sweetest pancakes that get eaten as fast as we can whip them up. Give this recipe a try for the best pancakes ever.
Make the best pancakes ever
- 2 cups flour
- 4 tbsp. sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 1 1/2 cup buttermilk of whey from homemade yogurt
- 1/4 cup melted butter
- 1 tbsp. vanilla extract
In a large bowl mix dry ingredients.
Beat eggs until smooth.
Beat wet ingredients into dry. Do not over-mix. Lumps are ok.
Pour onto a hot greased griddle. Flip when bubbles on the surface break.
Makes 15-18 fluffy fresh pancakes.
These are great for breakfast or dinner. In fact, am more likely to enjoy them for dinner because it is a lot more fun to cook when I am wide away than early morning. Want to take these to the next level? Try one of our flavored syrups pumpkin spice, apple cider, or mulberry. These go great with scrambled eggs, and sausage or bacon.
The tricks to make the best pancakes.
Let the batter sit for 15 min them stir again before cooking.
Use a nice pan that things do not stick to or a griddle.
Heat your pan before pouring any batter down.
Flip as soon as the bubbles break in one fluid motion.
