Pumpkin Pie Pancakes
One of my favorite things about fall is the pumpkin pie. Mmmmm If you watch me in my private time you may know my dirty little secret. I Have an addiction to pumpkin pie. Not just a little addiction either. “The kids are in bed so I bake a pie and eat it all myself” kind of addiction. When my son was just born I perfected the crustless pumpkin pie… Now I have ventured off to fun things like pumpkin pie pancakes to share.
Every year instead of carving pumpkins we paint them just so I can bake them down into well… Pumpkin pie, pumpkin bread, pumpkin muffins, and anything else you can imagine. Lets get real… This is why I struggle with my weight. I lack self-control but I most certainly do not lack cooking skills. A rare thing in my family.
I may have rubbed off on the kids… Yesterday while they kids played with all of the Pumpkin Pie Spice Sensory Materials I created for them the night before I whipped these up. But, I may have cheated a little. Hey, this is SIMPLE at home so a little cheating to simplify life is aOkay.
Normally I would give you a list of ingredients and directions but, who has time for that on a busy morning? So here is how you can make these in just 3 easy steps.
- Mix your favorite pancake batter. Yep even Hungry jack is ok for this (Yes I use Hungry Jack sometimes we love it in our fried chicken.
- Add 1/4 cup pumpkin puree
- Add tablespoon pumpkin pie spice and mix well
Yep that’s it. Easy Peasy. We topped with homemade whip cream made the same way we make butter. (put heavy whipping cream into a jar filling about half way and shake… If you’re feeling adventurous add a crown to spice your morning up a bit. What you don’t make butter and whip cream with a tiara?
