Sausage and Egg Stuffed Crepes
I am a huge fan of breakfast food. All day long. One of my go to foods for eating on the go at any time of day is breakfast burritos. Packed with protein and flavor while easy to hold and eat. I decided I just had to try the guacamole mix in a breakfast burrito.
Tunes out we were out of shells and forced to get creative. Okay, that is not such a bad thing. These sausage and egg stuffed crepes turned out amazing.

Joining the launch of this new Saveur line has challenged me to step away from the ordinary individual spices I pull out night after night. The only pre-made mix I have ever fallen in love with before was Montreal Steak seasoning.
As a busy mom sometimes I need a grab-and-go mix that will add amazing flavor to a dish without needing both hands to make it happen. This is one reason Monkey and I are so excited to be part of this launch.
Though we beg pardon and hope you can forgive the disasters that is our kitchen as we remodel the new house… I may have bitten off more than I can chew buying that one.
Make your own crepes
This part was so much fun I found it amusing watching Monkey’s face as I flipped them in mid-air. Needless to say, she loved adding that one to her cooking skills.
Though I won’t lie I cheated and used Krusteeze pancake mix for the base of ours though I could have used or best-ever pancakes recipe to pull off a sweeter flavor.
What you need
- 1 cup pancake mix
- 3/4 cup four
- 1 cup water
- 1 egg beaten
How to make crepes
Mix pancake mix, flour, and water until smooth and lump free.
Slowly mix in beaten eggs.
Place two tablespoons mix into a small hot frying pan. Tilt and turn the pan until the bottom is coated. Flip once cooked enough to slip free when shaking the pan. (Pan flip is optional but fun.)
Sausage and egg crepe filling
Crepes are usually filled with sweet whipped cream and fruit. More dessert than breakfast style. This twist makes an awesome savory meal and the Saveur Guacamole Mix takes it to a whole new level of AMAZING.
- 1 half-pound ground sausage browned
- 1 6 eggs
- 1 teaspoon of your favorite egg seasonings
Brown ground sausage into crumbles.
Mix your seasonings into beaten eggs.

Scramble right into the sausage.
Fill crepes with sausage and eggs folding around the filing. Encourage everyone to customize with fresh veggies.
Flavorful and frugal
We doubled this recipe to feed 7 with a lunch on the side. Eggs (67 cents), 1 pound sausage ($2.50 on sale), Pancake mix (25 cents bought in bulk), Flour (15 cents bought in bulk) for a total of $3.67 cents the base of a great large family meal.
I chopped up cheese, onions, and peppers from the fridge for customizing for each person. I ended up covering a cookie sheet end to end in two rows with these. Yummy.
