since my husband’s accident, I have been cooking nonstop to help make sure he gets enough to keep himself healthy while he heals. Bacon is one of his favorite foods. While I made him ham and grilled cheese a few times bacon grilled cheese is by far the favorite around here.

While I am a huge fan of thick-cut bacon and think it is purely amazing for cooking bacon in the air fryer it is perhaps not the best cut of bacon for making bacon grilled cheese sandwiches.
How to get the cheese to melt well when making grilled cheese sandwiches
The trick to getting truly melty cheese with any grilled cheese is to grill both sides of the bread. This can be done by placing the bread on the skillet and getting ti toasty before flipping and adding your fillings. For this sandwich, you want to be sure your bacon is hot when it goes in as it will help the cheese melt as well.

What you need for bacon grilled cheese
- 2 slices bread
- 4 slices of bacon halved
- 2 slices of cheese
- butter
How to make a bacon grilled cheese
Place your bacon on a cold skillet and turn the heat to medium. The cold skillet to start cooking helps to reduce shrinking.
After the skillet has warmed butter the skillet and play your bread down into the butter.
When the bacon is about done cooking lift one side of the bread and butter the skillet again before placing it uncooked side down on the skillet.
Add your cheese and bacon to the toasted side before putting the toasted side of the second piece of bread on top.
After the bottom side is toasted butter the skillet and flip to the other side until golden.
Cut in half and serve.
