How long do you slow cook a roast?

While many recipes will tell you to slow cook your roast for anywhere from 4 to 6 hours I have a secret for you. For the best roast possible slow cook on high for as long as possible. The best roast I ever made was slow cooked for 16 hours!

For this fall apart you have to dish it out with a spoon roast the cooking time was on high for 11.5 hours. I started the meat with some broth, freshly chopped onions, garlic, and my choice of herbs and spices before I got my husband up for work while I was up doing morning chores like prepping breakfast, moving the banana butter I had in the slow cooker overnight to jars for canning and working on my productivity plan for the day.

When it comes to how long to cook your slow cooker roast beef with potatoes and carrots the answer is always the longer the better.

How to make slow cooker roast beef with potatoes and carrots

Making your roast in the slow cooker is extremely easy. You can adjust this recipe to fit your tastes but I have to tell you that when it comes to a tasty roast more is always more.

What you need:
you will notice that I am not giving you exact amounts here. This is because at the end of the day we are a large family and we make a lot more food than a smaller family will need. Simply take the size of the roast you are making and how many people you are feeding and adjust how much meat and veggies should go into your slow cooker.

  • Roast large enough to feed your family.
  • 1-2 quarts beef broth.
  • 1-2 medium yellow onions
  • 1-2 pounds raw carrots
  • 2-5 pounds potatoes
  • 1/2 to 1 full bulb garlic
  • 3+ tablespoons montrial steak seasoning (go heavy on this it is amazing)
  • 3 tablespoons italian seasoning
  • water as needed

How to start your slow cooker roast

When you are ready to start your roast you can toss it in thawed or frozen depending on if you remembered to pull it out overnight. Remember you are starting it early so it will thaw and cook from frozen just fine.

Place your roast in your slow cooker and add 1 to 2 quarts of beef broth. If this does not cover your roast all the way you can add water to top it off.

Add herbs and spices of your choice. I prefer the above Montreal steak seasoning and Italian seasoning.

Chop up one fresh onion and toss it into the broth.

Follow by separating and peeling your garlic. Once your garlic is peeled you can toss it right into the pot. Turn it on high and let it cook.

Adding the the potatoes and carrots

If you are leaving the home while this cooks toss the potatoes and carrots in and stir the roast before you leave. If you will be at home you can add these in 4 to 5 hours before serving and they will be perfectly cooked either way. I live to give my roast time to cook before I add the potatoes and carrots because of how long I let it cook.
