This post is an old one that has been sitting around in my drafts for a long time. I distinctly remember the day I made this golden honey cornbread and took these pictures with my easy 3 bean chili.
My grandmother was alive still on that cold wither day and fairly lucid despite her dementia. She was amazed with the flavor and texture and even more amazing that I could make it without a box.
This brings back that memory of ger happily sitting at the table for dinner with the children and me. May this recipe bring warm memories from my family to yours.
What you need to make honey cornbread
:: 1 cup cornmeal
:: 1 cup all-purpose flour
:: 2 tablespoons sugar
:: 1 teaspoon baking powder
:: 1/2 teaspoon baking soda
:: 1/2 teaspoon salt
:: 1 cup milk
:: 1/4 cup honey
:: 2 tablespoons unsalted butter, melted
:: 1 large egg
Honey cornbread recipe
:: Preheat your oven to 425°F (220°C).
:: In a medium mixing bowl, combine the cornmeal, flour, sugar, baking powder, baking soda, and salt.
:: In a separate mixing bowl, whisk together the milk, honey, melted butter, and egg.
:: Pour the wet ingredients into the dry ingredients and stir until just combined.
:: Pour the batter into an 8-10 inch cast iron skillet.
:: Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Tips for great cornbread in a cast-iron skillet
Preheat the pan before adding your batter.
One thing that makes it easier to get an even bake when using cast iron pans is to preheat the pan. This can be done by placing the pan in the oven while you preheat it. When you are ready to use pull it out grease and add your batter for the perfect bake every time.
Grease the pan well.
Most of us have forgotten to grease a pan a time or two. When it comes to making cornbread that will come out of the pan without an issue it is essential that you grease the pan well before you add your batter. This is a great use for bacon grease.
